Ingredients
- 1 Cup lentils,rinsed and drained
- 1 onion,chopped.
- 2 cloves garlic minced
- 1 carrot diced.
- 4 cups vegetable broth or water.
- 1 tsp cumin powder.
- 1 tsp coriander powder.
- 1/2 tsp turmeric powder
- Salt and pepper to taste
- 2 tbsp olive oil.
- fresh cilantro
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions,garlic,carrot.Saute until the vegetables are softened about 5 minutes.
- Add cumin powder,coriander powder,and turmericpowder.Cook for another minute to toast the spices.
- Add lentils and vegetable broth or water to the pot.Bring to a boil.
- Reduce heat to low cover the pot and simmer for about 20-25 minutes or until the lentils are tender and cooked through.
- Season with salt and pepper to taste.
- Use an immersion blender or transfer a portion of the soup to a blender and blend until smooth.Alternatively, you can leave it chunky if you prefer.
- Serve the lentil soup hot,garnised with fresh cilantro.
